Bases

  • 150 grams Marie biscuits
  • 70 grams Butter (salted or unsalted), Melted

Filling

  • 250 grams Philly Cream Cheese
  • 65 grams castor sugar
  • 75 grams thickened cream, Plus extra whipped for serving
  • 1 egg
  • 2 tablespoons lemon juice
  • 100 grams frozen raspberries
  • 12 Fresh strawberries or raspberries

Recipe's preparation

  1. Preheat oven on 160 fan forced.
    Crush biscuits for 5 seconds on speed 5
    Add melted butter and mix for 5 seconds on speed 5. Check all mixed together- if not scrape down and repeat.
    Pack biscuits into patty pans with MC, then use spoon to neaten the edges.
    Clean bowl if necessary
    Place sugar and cheese in the bowl and beat 5 seconds, speed 5
    Add egg, cream, lemon juice and beat on 5 seconds, speed 5. Scrape down then repeat
    Gently stir through frozen raspberries with spatula.
    Cook for 18 mins, then leave in open oven until cool. Refrigerate, then carefully remove from patty cases
    Spread with a dollop of cream and place fresh strawberries or raspberries on top
    Enjoy!

Tip

Do not over beat mixture
Refrigerate once cool to decrease the risk of cracking
I have tried a few different combos and all have worked. Leave out the raspberries for a lemon cheesecake or add some defrosted raspberries to add colour to the mix.

    Yum, Yum, Yum!!! I love making different types of cheesecakes, this has become one of my favourite cheesecake recipes. So quick to make too.

    Delicious! Very easy to make. I made a few more so I used the whole packet of biscuits and some extra butter, and added more raspberries which made 18 individual cheesecakes without increasing the cheese or cream. Served without the fruit/cream topping and were still amazing

    Very nice, quick and easy. I added a bit less lemon and a splash of vanilla to mine. Next time I might try them with an Oreo biscuit base.

    Have this cooling in my even now. Can't wait to taste it! I made a small-medium cheesecake and put remaining in 2 x small ramekins. I also used mixed frozen berries

     

    Update: Yum!! The small ones were perfect. Bigger one could have done with a little longer cooking time as it was a little soft in the middle when i served it, but was still delicious
