Ingredients
Mixed Berry Muffins
- 75 grams unsalted butter
- 175 grams ricotta
- 40 grams caster sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 185 grams Self Raising Flour
- 80 grams Milk
- 120 grams Frozen Mixed Berries

Preheat the oven to 180C
Melt the butter 2min / 60 deg / speed 3
Add the sugar, ricotta, and vanilla and mix 20 sec / speed 4
Add the eggs and mix 20 sec / speed 4
Scrape down the sides of the bowl, add the flour and mix 20 sec / speed 4
Scrape down the sides again, add the mix and mix 10 sec / speed 4
Add the frozen berries and mix 10 sec / speed 4
Spoon mixture into a silicone baking muffin mould (about half way) or a greased metal muffin pan. Bake for 20 mins at 180C or until a skewer comes out clean.

Tip
For a little extra treat and burst of sweetness, add some white chocolate chips in at the same point as when you add in the berries.

Says add the mix and mix 10 secs think it must be meant to be milk
So good! I added the milk and used less sugar. Turned out very yummy.
Great recipe. Note the milk in missing in the method.
Great recipe to use up some left over ricotta. I used honey instead of sugar and also had to cook for 25 minutes. Even my 1 year old loved them!
I missed the milk as not mentioned. They seem okay as I included extra fruit.
Very nice recipe. I added white choc chips for added taste. I also cooked for 10 minutes extra as they were still quite wobbly.

Thanks for picking up on the milk missing from the steps, I've updated the recipe. Although as you've noticed it's difficult to mess up much when the TM does the work for us!
Yum! Just made these for breakfast and they're almost all gone! You don't say when to add the milk so I added it with the ricotta. I also needed to cook them for almost 25mins in my very hot oven.
