Mumma's Coconut Fingers

  • 250 grams Butter
  • 1 cup caster sugar
  • 2 eggs
  • 3 tablespoons Milk
  • 3 1/2 cups P Flour
  • 6 baking powder
  • 1 1/2 cups Coconut
  • extra caster sugar for coating

Recipe's preparation

    Method
  1. Preheat oven to 170c (f/f) or 180c & paper line biscuit trays.
    Insert butterfly. Add butter & caster sugar to the bowl & mix 30 secs / sp 4.
    Lightly beat eggs in a seperate bowl & add a little at a time, till well combined 30-40 secs / sp 4. Remove butterfly.
    Add remaining ingredients & mix 30-40 secs / sp 5. Scrape down sides & repeat if necessary.
    Roll into skinny shaped fingers, then roll in extra caster sugar & place on biscuit trays, leaving a little room to spread.
    Bake 15 mts until just begining to brown. Cool on a wire rack.

Tip

These biscuits can also be rolled into walnut sized balls & pressed with a fork for a differant shape. They are also lovely rolled in a cinamon sugar, or a lavender sugar.
