Ingredients

Paleo Choc Chip Cookie Dough Bites

  • 250 g roasted unsalted peanuts
  • 1 can Chickpeas (400g), drained and patted dry
  • 80 grams honey
  • 2 teaspoons vanilla extract
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon cream of tartar
  • 1 pinch salt
  • 100 grams dark choc chips

Recipe's preparation

  1. 1.  Preheat oven to 175 degrees C

    2.  Place Peanuts into mixing bowl and process 15 sec/speed 10.  

    3.  Scrape down the sides of the bowl and process 10 seconds/speed 8 or until smooth.  (Do not overmix as your peanut butter will become warm and melt the Choc Chips when you add them later!)

    4.  Add Chickpeas, Honey, Vanilla Extract, Baking Soda, Cream of Tartar and Salt.  

    5.  Process 10 sec/speed 8.

    6.  Scrape down sides of bowl and process for 10 sec/speed 8 or until very smooth.

    7.  Add Choc Chips to bowl and Gentle stir setting"Gentle stir setting"  5 sec or until just combined

    8.  With wet hands form dough into 2-3cm balls.  

    9.  Place on oven tray and bake for 10 minutes or until lightly golden

    Please note: the balls do not rise with baking. 

Tip

- These dough balls are free from gluten and grains dairy and refined sugars and are 100% delicious!  I find it very hard to stop myself from eating the entire batch!  Haha.  Would love to know if you find the same!

- They are lightly baked to melt the chocolate and bind together but keep the consistency of "uncooked cookie dough" where they derive their name.

- Using pre-made natural peanut butter works very well in this recipe as it keeps the mixture cool so the choc chips do not melt when in the bowl.  If you already have made natural peanut butter, skip step 2 & 3 and add the peanut butter in step 4.

- Baking soda and cream of tartar are acceptable ingredients within the general consensus of the paleo community.  A not-strickly-paleo alternative is to substitute these ingredients for 1 tsp of baking powder.

    Contrary to popular belief, legumes (peanuts chickpeas etc) were part of our ancestral diet so it doesn't need to be removed. If you restrict legumes on your preferred paleo regime, just don't cook it hon.

    Please remove "paleo" from this title. Peanuts and chickpeas are in no way paleo.
