Ingredients
BASE
- 150 grams Coconut, shredded or desiccated
- 80 grams unsalted peanuts
- 12 medjool dates
- pinch sea salt, Himalayan if you have it
Middle
- 150 grams unsalted peanuts
- 10 medjool dates
- 1 tsp Vanilla Bean Paste, or extract
- pinch sea salt
- 40 grams unsalted peanuts, extra
Caramel Topping
- 60 grams Cashews, Unsalted, raw
- 8 medjool dates
- 50 grams Unrefined Honey, available from health food stores
- 50 grams coconut oil
- pinch sea salt
Sprinkle
- 1 tbsp cacao nibs, milled
- 1 tbsp Shredded coconut

I'm cooking this todayRecipe's preparation
1. Add all ingredients to your TM and blend - 15 seconds/speed 8
2. Line dish with baking paper
3. Spread onto base of dish and press down firmly. Wetting hands a little helps
1. Add peanuts to TM and blend - 10 secs/speed 8, until smooth like peanut butter
2. Add dates, vanilla and salt and mix 10 seconds/speed 8, until combined
3. Add extra peanuts and turbo pulse 2-3 times
4. Press firmly onto base and return to fridge
1. Place cashews into TM and blend for 30 secs/speed 8, pausing to scrape down sides if needed
2. Add remaining ingredients and mix for 20 secs/speed 7, pausing again to scrape sides if needed
3. Pour onto exsisting layers and sprinkle with cacao and coconut if desired
4. Refrigerate until set (1-2 hours)
