Ingredients
Plum and Almond Friands
- 7 Fresh Plums, Black Doris or similar
- 100 grams raw almonds, or almond flour
- 50 g potato starch, (see tips for alternatives)
- 100 grams sugar, or erythritol/stevia, fine milled
- 1/2 tsp cinnamon
- 4 egg whites, (approx 150g)
- 1 tsp vanilla essence
- 100 grams Butter, chopped into cubes
- flaked almonds, Optional for the top

- Preheat oven to 180'C. Grease 10 hole friand pan or muffin tray. No need to grease if using silicon pans.
1. Cut 5 plums into quarters and remove stones. Reserve these 20 quarters for the tops. Quarter 2 plums, remove the stones and finely dice.
2. Place almonds in the mixing bowl and mill 8 sec/ speed 8.
3. Add potato starch, sweetener/sugar and cinnamon, mix 10 sec/speed 5, transfer to a separate bowl.
3. Place egg whites into mixing bowl and add vanilla essence. Insert butterfly whisk and whisk for 1 min / speed 4 or until thick but not stiff peaks.Transfer to a separate bowl. Rinse bowl.
4. Place butter in bowl and melt 2 min/70'C/speed 2
5. Add the flours back to the bowl with the butter, mix 15 sec / speed 4
6. Add egg whites and mix 20 sec / speed 2. Remove the bowl and use the spatula to carefully fold the 2 diced plums into the mixture and finish folding in any egg white still left. - 7. Divide the mixture evenly into friand or muffin pans.
8. Top each with two quarters of plum and a sprinkle with flaked almonds if desired.
9. Bake 25 minutes until well risen and tops bounce back when gently pushed.
Let sit for 5 minutes then remove from pans while still warm.
Tip
Potato starch can be substituted with rice flour, cornflour, gluten-free flour or tapioca starch. Rice flour makes a drier friand.
Makes 9 muffin sized or 10 smaller friands shaped cakes.
