Ingredients
Plum & Walnut Crumble Slice
- 90 grams walnuts
- 160 grams brown sugar
- 75 grams plain flour
- 180 grams unsalted butter, Softened
- 150 grams caster sugar
- 1 egg
- 170 grams Self Raising Flour
- 90 grams golden syrup
- 6 Fresh Plums, Seeds removed, cut into 5mm slices
- 1 pinches sea salt flakes

- Preheat oven to 180 degrees. Line the base and sides of a 20 x 30cm Lamington/Slice tin with baking paper.
- To make the crumble, add walnuts to bowl. 3 secs, speed 5. Then add brown sugar, plain flour, a pinch of sea salt flakes, and 80g of butter. 4 secs, speed 5. Set crumble aside.
- Place remaining 100g butter in bowl. Melt butter, 1 min 30 secs, 60 degrees, speed 2.
- Place Caster sugar, egg, self raising flour and golden syrup in bowl and mix 10 secs, speed 5. Mixture should be smooth and combined.
- Spread mix into prepared pan and smooth out.
- Layer sliced plums over the top and scatter crumble mixture onto plums.
- Bake for 50-55 mins until centre is set and crumble is golden. Cool in pan before cutting into slices to serve.
Tip
You can squish some crumble into some bigger balls for texture before sprinkling on top of plums

This is so delicious! I used fresh peaches instead of plums. Halved all the sugars/golden syrup due to personal taste. I added extra fruit to the filling to make it higher. Baked for just over an hour in a 175c fan forced oven and it was loved by all. Thank you for sharing this recipe x
