Protein bread
- 3 Medium ripe bananas
- 8 Medjool dates, seeds removed
- 60 grams tahini or nut seed butter
- 1 lemon
- 5 grams cinnamon
- 100 grams Coconut Flour
- 10 grams bicarb soda
- 4-6 eggs
- pinch salt

Blend bananas and dates for 15 second speed 9, or until desired consistency is achieved.
Add remaining ingredients and mix for 20 seconds speed 5 until well combined.
Pour into prepared loaf tin (greased or line with baking paper) and bake for 45 minutes at 180 deg (160 degrees fan forced).
Picture is of a double batch! (just make sure you reduced temp to 160 deg (140 degrees fan forced) and increase cooking time.
This is one of my favourite recipes from Wholefood simply that I have converted to Thermomix methodology and added some variants and options!
Tip
Coconut flour can be substituted with plain or wholemeal flour 100 g and 50 grams shredded coconut (would not be gluten free of course!)
Tahini can be replaced by nut butter of your choice.
Egg quanitity can be varied depending on your texture and protein needs!
Add sultanas or dried fruit or nuts of your choice for 5 seconds speed 1 reverse.
This recipe can be easily doubled - its so delicious myself and kids love it!
