- 500 grams Mixed Dried Fruit - sultanas, dates, apricots ...
- 2 eggs, beaten
- 1 cup Sugar (I used caster sugar), Raw
- 1 flour plain, 1 cup
- 1 flour, Self raising 1 cup
- 1 --- 1 teaspoon bicarbonate soda
- all spice or mixed spice, To taste if liked
- 125 grams Butter Cubed

Place pineapple and juice in bowl, blend 3 seconds on speed 7. Check if there are any chunks missed and blend again for a second if necessary. Add Butter sugar dried fruit of choice, I used a whole pack of sultanas that were drying out and some prunes that needed to be used, but the choice is yours. Set to 90 degrees Speed one"Counter-clockwise operation" and bring to boil. When temperature reaches half way add bicarb soda And spice thru lid. Allow to boil gently for five minutes then pour mix into a large bowl to cool. Meanwhile beat eggs slightly with a fork and line your cake pan with baking paper( after greasing well) once mix has cooled add eggs and stir in well. Sift in flours and fold well. Pour into prepared pan and place in oven 180 degrees or 175 a forced. Time will depend on your oven, check with a skewer after 45 minutes. Cool for ten minutes in pan then turn out onto wire rack.

Tip
A great way to use up dried fruit that has passed its prime, boiling method plumps them up a treat. Is very moist and keeps well. Makes quite a large cake.
