Recipe's preparation

  1. Heat milk and sugar for 5 minutes, 98 degrees, speed 2.
  2. Add bicarbonate of soda to hot mixture and mix speed 4 for 3 seconds. Mixture should froth.
  3. Pour into shallow bowl and put into fridge to cool to body temperatue. Make sure you scrape mixing bowl out well. No need to wash.
  4. Put plain flour and butter into bowl. Blend on speed 6 for 10 seconds.
  5. Add cooled milk mixture to mixing bowl and knead Dough mode"Dough mode" for 30 seconds.
  6. Tip onto a sheet of cling wrap, bring together into a flat disk and put into the fridge to rest for 30 minutes.
  7. Roll out half of the dough on a well floured thermomat with a sheet of cling wrap on the top to stop the rolling pin sticking to the dough. Using a plastic cutter, cut circles to fit your patty pans. Grease the backs of the patty pan tray and mould circles of pastry to fit over them. This stops cases from rising in the middle. Bake at 190 deg C for about 10 minutes, until golden brown. Remove carefully from trays and allow to cool.
  8. Baked pastry cases can be stored for a week or more in a sealed container. Fill just before using with caramel and cream, or lemon curd.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
    Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
