- 220 g raw sugar
- 155 g Chopped Nuts (I used Walnuts)
- 35 g cacao powder
- 1 teaspoon Vanilla Bean Paste (5g)
- 75 g aquafaba (chickpea brine)
- 1 pinch salt flakes

Preheat Oven to 160 degrees.
Mill Sugar in bowl - 10 seconds, Speed 10.
Add all other ingredients to "Closed lid" , Mix 6 seconds, speed 6.
Spoon Mixture (TBSP size) onto lined baking tray - leave lots of room in between as they spread!
Bake for 20 minutes. Cookies should puff up and crack a bit.
Allow to cool on tray 10 minutes before eating.
Tip
You can use Icing sugar instead of Raw Sugar.
You can sub the nuts for choc chips tpo make them nut free as well!
I used 247 Ground Flaxseed with Strawberry and Cacao in place of Cacao powder. Berry - I mean Very delicious!
For non-vegan cookies sub the aquafaba (juice from a can of chickpeas) for 2 egg whites and reduce cooking time to 12-15 minutes.
Make Jumbo cookies by spooning 2 TBSP's of Mixture per cookie on tray. Remember to leave plenty of room between them to spread and allow time to cool and harden before moving.[[wysiwyg_imageupload:1854:]]

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!

Simple recipe. I used rice malt syrup in place of sugar and these turned out fantastic.
Wow! just WOW! I used coconut sugar in place of cane sugar and needed to reduce the cooking time of the 2nd and 3rd batch. So Yum.
These were AMAZING.....loved the chewy texture. Very morish!
