Ingredients

Dry Ingredients

  • 100 g bulgar wheat, Whole
  • 1/2 zest of lemon
  • 90 g wheat bran
  • 50 g bakers flour
  • 1 1/2 teaspoon baking soda
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Wet Ingredients

  • 315 g buttermilk, (Can use greek yoghurt thinned with milk)
  • 1 --- large egg
  • 60 g ricebran oil
  • 20 g honey
  • 50 g brown sugar
  • 5 g Vanilla Bean Paste
  • 2 piece medjool dates
  • 1 teaspoon Matcha Tea, (Optional)
  • 1/2 juice of lemon
  • 1 --- cup blueberries, Don't add these in West Ingredient Stage
  • 1 tablespoon Granulated sugar, (Optional)

Recipe's preparation

    Dry Ingredients
  1. Add Bulgar Wheat to Bowl. MIX 1 Minute / Speed 9. Set aside.

  2. Zest of / Lemon in bowl. MIX 10 Seconds / Speed 9. Scrape and repeat if necessary for finer zest. 

  3. Add reserved Bulgar wheat and remaining dry ingredients to bowl with zest. MIX 5 Seconds / Speed 5. Set aside in large mixing bowl.

  4. Place all wet ingredients apart from blueberries and granulated sugar to mixing bowl. MIX 15 Seconds / Speed 6. Pour onto dry ingredients and mix just through. Do not overmix. Should still look rough.

  5. Spoon roughly 1 1/2 TBSP of mixture into muffin cases.  LEAVE SOME FOR THE TOP.

    Evenly distribute Blueberries between cases.

    Cover Blueberries with remaining Mixture (Should be roughly 1 TBSP ea).

    Sprinkle with Granulated Sugar.

     

  6. Bake for 8 minutes at 205 degree oven.

    Turn tray around and bake a further 8 minutes or until cooked through (skewer comes out clean.)

    Allow to cool 10 minutes before serving.

Tip

You can use any fruit you like.  I have made these with Raspberries and dried apple pieces and they were delicious.

Dates could be increased and then add nuts.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
