Ingredients
Mud Cake
- 200 g Butter, chopped
- 300 g white chocolate, chopped
- 250 g Milk
- 3/4 castor sugar, cup
- 2 teaspoons vanilla essence
- 2 eggs, at room temperature
- 2/3 Self Raising Flour, cup
- 1 plain flour, cup
- 1 frozen raspberries, cup
- 125 g frozen raspberries, for decoration
Ganache
- 200 g white chocolate, chopped
- 1/2 sour cream, cup

Preheat oven to 160C/140C fan forced. Grease and line base and side of a 20cm (base diameter) round cake pan with baking paper.
Chop chocolate on speed 8 for 8 seconds. Add butter, sugar, milk and essence to TM bowl. Mix on speed 3 at 50C for 3 minutes or until melted and combined. Cool for 15 minutes.
Add eggs and mix on speed 4 for 10 seconds.
Add flours and mix on speed 3 for 10 seconds.
Pour into prepared pan; level surface. Added 1 cup of raspberries to the tin and lightly stirred through batter. Bake for 1 hour 15 minutes or until a skewer inserted at centre comes out clean. Cool in pan.
Place chocolate in TM bowl and grate for 20 seconds on speed 8.
Add sour cream and cook for 2 minutes on speed 3 at 50C. Scrape down sides and then cook for 30 seconds on speed 3 at 50C or until melted and smooth.
Stand for 1 hour or until thickened. Spread mixture over top of cooled cake. Serve topped with raspberries.

Recipe adapted and converted from Recipes + April 2012. The 250g raspberries were an addition to the original recipe so the cake can be baked without the raspberries.

I make this without the raspberries for all the birthdays in our family. Always a winner!
I made it his today for a Birthday. Lovely. Although next time I will probably us the 'decadent white chocolate mud cake' recipe as all ingredients are weighed, rather than cup measures.
I made this gluten free and it turned out pretty yummy. I had two problems, once I added the flour I had to mix it for longer as the 10 seconds wasn't enough some of the flour wasn't mixed in. The other problem I encountered was the cooking time. Mine took 2 hours and I had to turn the oven down to 110 and cover the cake with foil as it would have burnt otherwise. Next time I make this I think I will halve the recipe or cook it in 2 batches. None the less a very yummy cake especially when served with traditional ice cream from EDC
