Ingredients

Cookies

  • 225 grams plain flour
  • 75 grams custard powder
  • 250 grams softened butter
  • 75 grams icing sugar
  • 1/2 teaspoon vanilla essence

Vanilla Filling

  • 90 grams softened butter
  • 300 grams icing sugar
  • 1 1/2 teaspoon vanilla essence
  • 2 tablespoon water

Passionfruit Filling

  • 90 grams softened butter
  • 300 grams icing sugar
  • 2 passionfruit, Strained and Seeds Discarded

Recipe's preparation

    Cookies
  1. 1) Preheat the oven 180 degrees, line two baking trays with paper. In a bowl combine flour and castard powder leave to the side

     

  2. 2) In TMX bowl cream together butter, sugar and vanilla 40seconds, speed 4.

     

  3. 3) Remove MC set 40Secs, Speed 4 add flour mixture until just combined. Roll into small balls (15grams) and place on baking tray leaving a 2cm gap. Flatten slightly with back of fork. Bake 10-15mins until frim but not coloured. Wash TMX bowl

  4. Filling
  5. Vanilla beat butter in TMX bowl 20secs, speed 4 until pale and creamy. Remove MC set 40secs speed 4, slowly add icing sugar, until combined. Add water and beat till smooth and Creamy, (more water may needed to be added depending on consistancy)

     

    Spread filling on the flat side of half of the cookies and sandwich together with the remaining. Allow to set before serving.

     

  6. Passionfruit beat butter in TMX bowl 20secs, speed 4 until pale and creamy. Remove MC set 40secs speed 4, slowly add icing sugar, until combined. Add passionfruit juice and beat till smooth and Creamy

     

    Spread filling on the flat side of half of the cookies and sandwich together with the remaining. Allow to set before serving.

Tip

Custard Powder can be subtituted for Cornflour.

If mixture becomes hard to handle then place in the fridge for 10mins and then continue to roll out.
