Ingredients

Cake

  • 250 g zucchini, roughly chopped
  • 185 g Butter, cubed
  • 2 tsp Orange rind, finely grated
  • 220 g caster sugar
  • 2 eggs
  • 60 g orange juice
  • 230 g self-raising flour

Frosting

  • 90 g Butter, cubed
  • 240 g icing sugar
  • 45 g orange juice

Recipe's preparation

    Cake
  1. Place zucchini into mixing bowl and chop 3 sec/speed 5.  Set aside.  Rinse and dry mixing bowl.

  2. Place butter, orange rind and sugar into mixing bowl.  Mix 30 sec/speed5.  Scrape down sides of bowl.  Mix 1 min/speed 4.

  3. With blades rotating at speed 4, add eggs one at a time through the hole in the mixing bowl lid.

  4. Add juice and flour and mix 20 sec/speed 5.  Scrape down sides of bowl. 

  5. Add zucchini and mix 10 sec/speed 3.

  6. Pour batter into greased and lined slice pan.  Bake 40 mins at 180°C.  Stand for 5 mins before turning onto wire rack to cool.

  7. Frosting
  8. Place sugar in mixing bowl and mix 5 sec/speed 9 to remove any lumps.

  9. Add butter and juice and mix 30 sec/speed 4.

  10. When cake is completely cold, spread with frosting, cut and serve.

Tip

To get excess cake batter from blades use Closed lid"Closed lid" and press Turbo for 1 sec twice.

    I am not a great cake eater but this cake is absolutely delicious.

    I will definitely be making it in future

    The orange gives it so much flavour.

    I frequently find myself going back for another slice

    Really yummy!! After removing the zucchini I added the orange peel and wizzed up, before adding the butter & sugar (which I used coconut sugar & reduced to 160g).

    I loved that the final product was really orangey coz sometimes that gets lost. And the zucchini has kept it nice and moist.

    Delicious and truly as easy as described. I milled the orange rind with the sugar as an earlier comment suggested as I have two fussy boys who dont like lumps in their food. They loved this cake with no idea about the zucchini. Trying to give it 5 stars but cant get it to work!

    Lovely flavours. I reduced sugar to 170g, butter to 140 g , flour to 190 g, but added 110 g almonds which I milled at the start and also 1 tsp baking powder. Will definitely make again. Also I peel off the Orange rind at the start and mill it with the sugar before I add the butter. This way the flavour infusers better.  tmrc_emoticons.)
