Coriander, Basil & Chilli Pesto
- 50g Parmesan cheese
- 30g coriander leaves
- 30g fresh basil leaves
- 30g pine nuts
- 50g pepitas
- 50g Cashews
- 45g lemon juice
- 150g olive oil
- 1/2 level teaspoons salt, sea
- 1 chilli, fresh red or green /cayenne / deseeded
- 1 --- garlic clove

- Add 50g parmesan cheese and 1 garlic clove to the mixing bowl and Chop 5 sec / speed 9
Scrape the sides of the mixing bowl - Add 30g coriander, 30g basil, 1 chilli red or green cayenne deseeded, cut in half, 30g pine nuts, 50g peppitas, 50g cashews, 45g lemon juice, 150g olive oil and 1/2 level teaspoon sea salt flaked and Chop 20sec speed 7.
- Transfer to a clean/ sterilized jar and poor some olive oil on top, seal the jar. Keep refrigerated until ready to use. Keeps well in the fridge for up to 7 days or in the freezer stored in an airtight container for up to 3 month.
Tip
Great to use as a dip, added to your favorite pasta sauce or soups for extra flavour, great added to some thicken cream heated up and used as pasta sauce. Great used as a spread on crackers, or on pizza and/or focaccia base.
