EmeraldSue Granola Banana Oat Clusters
- 50 grams coconut oil
- 90 grams Pure Maple Syrup
- 2 level teaspoons vanilla extract or paste
- 20 grams nut butter (pre make)
- 120 grams ripe bananas cut into pieces
- 300 grams rolled oats
- 180 grams Shredded coconut
- 1 level teaspoons ground cinnamon
- 1 pinches salt
- 60 grams mixed nuts (almond, bazil, macadamia)
- 60 grams mixed seeds (pepitas, sunflower, chia sesame)

- Preheat oven to 150deg c. Set aside a 30 x 40cm lined baking tray.
Place nuts in the mixing bowl and chop 3 sec/speed 5.
Repeat until nuts are reduced to 1/4 size. - Place oil in mixing bowl and melt 2 mins/60deg/speed 2.
- Add maple syrup, vanilla, nut butter, and bananas then chop 20sec/speed5.
- Add all remaining ingredients and combine 8 sec/"Counter-clockwise operation" /speed 3.
Spread evenly over baking tray. - Bake for 20 mins, then stir/turn over and bake for a further 20 minutes or until golden and crisp.
Turn oven off and leave oat clusters in the oven with the door held ajar with a wooden spoon to cool. Once cooled, transfer to an airtight container. Oat clusters will keep for up to 1 month in the pantry.
