Ingredients

Crackers

  • 20 grams chia seeds, (white or black)
  • 60 g water
  • 150 g Whole raw almonds
  • 15 g whole linseeds
  • 30 g sunflower seeds
  • 1 sprig rosemary, (or to taste)
  • 1 tsp sea salt flakes
  • 60 grams sesame seeds to finish, (or to taste)
  • to taste extra sea salt flakes, (or to taste)

  • 1/2 level teaspoons Garlic powder
  • 1/8 level teaspoons dried chilli flakes optional

Recipe's preparation

  1. Mix chia seeds with water in a small bowl & allow to sit at room temperature for approximately 1 hour.

  2. Preheat oven to 175deg. Line 2 large baking trays with non-stick baking paper or silicone tray liners.

  3. Place almonds, sunflower seeds, linseeds, sea salt flakes rosemary, garlic powder and chilli flakes into the TM bowl & mill for 20sec/sp7.

  4. Add the soaked chia seeds & mix on 12sec/sp4 or until the ingredients begin to form a dough ball

  5. Scrape dough onto a thermomat and form into a ball with hands. Split into 2-3 balls a work with smaller amounts. Keep other balls in an airtight bag so as not to dry out.

  6. Place a sheet of non-stick baking paper on top & roll out dough to approx 1-2mm thick. (the thinner the better, crispier cracker)

  7. Remove baking paper and cut 4-5cm round circles using a cutter. (use plastic cutter so as not to damage thermomat)

  8. Spread shapes onto baking trays (use a flat cheese slice or knife to lift carefully) Baste lightly with oil of choice and sprinkle with extra sea salt flakes and sesame seeds

  9. Bake in oven for approx 10-15 mins until slightly golden. Remove from oven and let cool slightly on baking tray before transferring onto a cooling rack.
