Ingredients

Buckwheat Fruit Bread

  • 140 g buckwheat raw
  • 200 g basmati rice
  • 140 g arrowroot flour
  • 40 g chia seeds
  • 1 teaspoons xanthan gum
  • 1 teaspoons salt
  • 150 g walnuts, lightly crushed
  • 1 teaspoons caraway seeds
  • 30 g dried cranberries
  • 120 g pitted dates, cut in halves
  • 100 g dried figs, cut in halves
  • 50 g dried apricots, cut in quarters
  • 400 g water
  • 15 g Maple syrup
  • 2 teaspoons dried instant yeast
  • 30 g olive oil
  • 1 tablespoons rice wine vinegar
  • 2 eggs

Recipe's preparation

  1. 1) Grease and line a loaf tin (27x10cm) with baking paper and set aside.
  2. 2) Place buckwhate and rice into mixing bowl and mill 1 min 30 sec/speed 9.
  3. 3) Add arrowroot, chia seeds, xanthan gum, salt, carraway seeds, dried cranberries, pitted dates, dried figs and dried apricots and mix 6 sec/speed 6. Transfer to a separate bowl and set aside.
  4. 4) Place water, sugar, yeast, oil, vinegar and eggs into mixing bowl and heat 2 min/37°C/speed 2, then mix 15 sec/speed 6. Scrape down sides of mixing bowl with spatula.
  5. 5) Add reserved flour mixture and knead Dough/1 min. Pour batter into prepared loaf tin, cover and set aside to prove for approx. 1 hour, or until nearly risen to the top of tin.
  6. 6) While proofing, heat oven to 210°C.
  7. 7) Bake for 30-35 minutes (210°C) or until golden. Allow to cool in tin for 5 minutes, then turn out onto a wire rack to cool completely before serving.
