Ingredients
DOUGH
- 375 grams warm water
- 3 tablespoons dried yeast
- 2 tablespoons castor sugar
- 600 grams flour
- 2 teaspoons salt
EGG WASH
- 2 egg yolks
- 2 tablespoons Milk
- Seseme Seeds / Poppy Seeds
Water for boiling
- 2 litres Water.

Add water, yeast and 1 tablespoon of castor sugar to bowl and let stand for 5 minutes. Then add remainding castor sugar, flour and salt. Mix speed 4 for 8 seconds. Knead for 8 minutes . Leave in bowl and loosely cover with plastic wrap. Set aside in a warm, draught-free place for 30 minutes or until dough rises by half.
Preheat oven to 180°C. Combine extra water and remaining sugar in a large saucepan over high heat; bring to the boil. Reduce heat to medium; bring to a simmer.
Brush an oven tray with oil. Divide the dough into 8 or 12 even portions (I do 8 nice big bagels). Roll each portion into a ball. Push a lightly floured finger through the middle of the ball to create a hole (see photo) Gently flatten the ball slightly. Place on the oiled tray and set aside for 10 minutes to rise slightly.
Add 4 of the bagels to the simmering water and cook for 3 minutes turn and cook for a further 3 minutest. Use the slotted spoon to remove and transfer to oiled oven tray. Repeat for the remaining bagels
Whisk the egg yolks and milk together in a small bowl. Brush evenly over each bagel and sprinkle with poppy / seseme seeds. Bake in preheated oven for 20 - 30 minutes or until golden brown and cooked through - Bake on oven racks so bottom dries from the boiling process. Remove from oven and set aside to cool.
