Ingredients

Dough

  • 300 grams warm water
  • 1 sachet Yeast
  • 1 tsp salt
  • 450 grams bakers flour
  • 2 tsp sesame seeds
  • 1 tbsp Milk

Filling

  • 80 grams drained sundried tomatoes
  • 55 grams Pitted black olives
  • 1 tsp dried basil or small handful fresh basil
  • 50 grams feta

Recipe's preparation

    Dough
  1. Place the water, yeast and salt in TM bowl and mix for 5 seconds on speed 3.

    Add flour and mix for 5 seconds on speed 7.  Set time for 3 minutes, dial to lid closed position and interval speed.

    Take dough out of TM bowl and wrap in breadmat or place in a bowl with gladwrap over the top.  Set aside in a warm, draught free place for 30 minutes. 

    Preheat oven 200C.  Grease a 10 x 20cm loaf pan.  Wash TM bowl and dry.

  2. Filling
  3. Place sundried tomatoes, olives, feta and basil in TM bowl and chop for 5-8 seconds on speed 6.

     

     

  4. Roll dough into a 30 x 40cm rectangle.  Spread the sundried tomato mixture over the dough leaving 1cm around the edge.

    Starting from the long side, roll the dough into a log.  Cut the log into 8 even slices.  Arrange the scrolls, side by side, cut side up, in the prepared pan.  Cover with gladwrap and set aside for 30 minutes in a draught free place to prove.  The scrolls should rise close to the top of the tin.

     

    Brush the milk over the top of the scrolls and sprinkle with sesame seeds. 

     

    Bake for 30-40 minutes, or until golden and the loaf sounds hollow when tapped.

     

    Transfer to a wire rack to cool slightly.

     

Tip

If you do not have a loaf tin you can make scrolls by placing on a tray, they just won't rise as high as the tin.

    I added Bacon, Parmesan cheese, some chili flakes and a garlic clove to this recipe and it was delicious..

    So delicious! I did fair bit of tweaking to suit my pantry. I added wheat germ and pepitas to the dough, and then spread the dough with tomato relish that needed using up, followed by a mix of Parmesan and green olives. I'll definitely be making this one for hubby when he comes home.

    Woohoo.  Thanks for the confidence boost.  An easy to follow recipe with a perfect end result.  I am a TM beginner and found this fun and easy to do.  Next time I am even going to have a go at changing what spread I put into my pull apart.  Feeling like a winner.  XXX

    Oops I added the tablespoon of milk to the mix instead of waiting! I do this nearly all the time, not read recipes correctly! But it's turned out ok. I I didn't have enough olives and sun dried tomatoes so cooked up some red capsicum in the sundried tomatoe oil and added that. I used goats cheese as didn't have feta. It's a great recipe, many thanks!  Big Smile

    So many recipes to try, but so little time!
