- 1 Thermomix Pavlova
- 150 g sweetened condensed milk
- 100 g Fresh Whipping Cream
- 2 tsp Vanilla Bean Paste
- 1200 g Milk Ice Blocks
- Fresh strawberries, blackberries & passionfruit

Bake 1 Large Pavlova (found in the Everyday Cooking recipe book - let me know if you need the recipe)
Once baked, remove the outer crunchy crust of the pavlova to use as a topping with the fresh fruit. Place the pavlova back in the oven for 15 mins until it has a slightly golden looks & it's crunchy on the outside again.
Then, place all the ingredients except the fruit into the TM (incl the pavlova - not the crust)
Mix until thick, smooth & creamy (30 - 40 secs / speed 9)
If it's still quite runny you can add in some extra milk or water ice blocks or place into the freezer for an hour or two until ready to dress.
To Assemble
Place the pavlova sorbet onto a platter (try not to have too many mouthfulls ......)
Add the fruit & crumbled pavlova
Mix through & drizzle over the passionfruit

This recipe can be used on the TM31 or TM5
The pavlova takes about 2 hrs to bake so do it the day or morning before you make your sorbet.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Hi Lauren - you remove the crunchy outer layer of the pavlova to use as a crumble & then you place the rest of the pavlova into the TM with all the ingredients except the fruit which you use afterwards.
Made this last night. Great idea And looks really cool on the plate! I found the sorbet to be little tasteless- I think I would make proper vanilla bean ice-cream with it next time. It also melted super-quickly (but I'm in tropical north qld!), so I was rushing to get it topped with fruit and crumbled pavlova before it was completely liquid (and I had the fruit cut up already and the pav crumbled). Made the pav in my kitchen aid coz I don't quite trust the thermo yet for pavs. Overall- would use this idea again, but with a tastier ice-cream instead
Can you please clarify when the payola is added? Do you add it with the sorbet ingredients or just use it during the assembly? Thanks
