Ingredients

Meringue

  • 200 g caster sugar
  • 3 egg whites
  • 1 pinches cream of tartar

baked alaska minced pies

  • 300 g Sweet Shortcrust Pastry, recipe on cookidoo
  • 300 g fruit minced meat, recipe on cookdioo
  • 1 tub vanilla icecream or homemade

Recipe's preparation

  1. preheat the oven to 180 c
    Roll out the pastry and line tart tin for pastry bases

    Spoon the mincemeat into pastry cases and bake for 20 mins
    until golden and cook through

    Set aside to cool

    Place bowl on top on mixing bowl and weigh in 100g caster sugar
    Insert whisk. Place egg whites and cream of tartar into bowl ,
    Beat until soft peaks form

    Beat for 2-3 mins /37 c speed 3
    Gradually adding the reserved caster sugar 1 tsp at a time through the hole
    Scrap down the sides

    Add remaining 100g of sugar and mix 15sec speed 1.5
    remove whisk
  2. Assembly
  3. Cover each cooled minced pie with a shallow scoop of icecream and the top with a dollop of merginue
    Fork the merigue up a bit so it get peaks all over
    Then brown briefly with blow torch or on hot grill
