Ingredients

Base

  • 90 g raw almonds
  • 70 g raw cashews
  • 10 Medjool dates remove seeds
  • 30 g goji berries or cranberries
  • 2 tablespoon Black or white Chia seeds, or a combination of both
  • 60 g dark chocolate
  • 35 g cacao powder
  • 30 g Shredded coconut
  • 40 g Maleo Syrup, can swap with honey or agave syrup
  • 50 g coconut oil

Cheesecake

  • 500 g philadelphia cream cheese blocks, or equivalent
  • 50 g double cream
  • 70 g caster sugar
  • 1 tsp Vanilla Bean Paste

Strawberry topping

  • 100 g fresh or frozen strawberries
  • 50 g caster sugar
  • squeeze lemon juice

Recipe's preparation

    Base
  1. Line a 30cm x 20cm slice tray with baking paper

    Blend almonds and cashews in Thermomix on speed 8 for 10 seconds.

    Add berries and dates. Mix on speed 7 for 4 seconds

    Add all other BASE ingredients and blen on speed 8 for 25 secs.

    Press mixture into lined tray.  Ensure Mixture is even.  You can use your MC to help press the mixture down evenly.

    Place tray in fridge to set for 15 minutes.

  2. Cheesecake
  3. Cut up blocks of cream cheese to 5cm cubes

    Add cream cheese to Thermomix Bowl

    Blend on speed 8 for 30 seconds. scrape down sides

    Add sugar and vanilla bean paste and blend on speed 4 for 1 minute. scrape down sides.

    Add cream and blend on speed 4 for 1 minute.

    Pour mixture over base and return to fridge or freezer to set.  At least 6 hours in fridge or quicker in freezer.  Can be left overnight in freezer or fridge.

    Remove from fridge / freezer approximately 20 minutes before serving. Cut up into small bite size pieces of slice.

    Add strawberry topping prior to serving or in a jug on the side.

  4. Strawberry Topping
  5. Add all ingredients to Thermomix Bowl and cook for 5 minutes.  90 degrees speed 4.

    Transfer into a small container and allow to completley cool in the fridge.

    Pour over slice when serving.

Tip

This would also be nice with some berries in the cheesecake.  I would stir through, using the spatula, around 200g just before tipping the cheesecake onto the base.
