Ingredients
Sweetened Condensed Milk
- 2 cans Sweeten Condensed Milk
- 200 grams dark chocolate, (70% if you want a more intense flavour)
- 180 grams white chocolate
- 160 grams brown sugar
- 200 grams White or raw sugar
- 250 grams Butter
- 50 grams glucose syrup
- 75 grams golden syrup

Break white chocolate into rough pieces and place in TM bowl "Closed lid" and mill at speed 9 for 5 seconds.
Set white chocolate aside. Do not clean bowl.
Add 1 can of condensed milk, 125g of butter, brown sugar, golden syrup and 25g of glucose syrup to bowl and mix at speed 3, 100 degrees, 8 min with MC off.
Open and scrape the sides into the mixture carefully with the spatula. Wipe the lid with a teatowl to remove condensation.
Cook at speed 3, Varoma for 20min with MC off.
Remove lid, wipe off condensation.
Add white chocolate and mix on speed 3-4 for 10 seconds or until white chocolate is fully melted into mixture. Do not over mix.
Using spatula, scrape out as thoroughly as possible into a heat proof bowl and sit aside until chocolate portion of fudge is complete.
Break dark chocolate into rough pieces and place in TM bowl "Closed lid" and mill at speed 9 for 5 seconds.
Scrape out as much as possible and place dark chocolate aside. Do not clean bowl.
Add white/raw sugar and mill in TM bowl "Closed lid" at speed 9 for 5 seconds.
Add 1 can of condensed milk, 125g of butter, white/raw sugar and 25g of glucose syrup to bowl and mix at speed 3, 100 degrees, for 8 min with MC off.
Open and scrape the sides into the mixture carefully with the spatula. Wipe the lid with a teatowl to remove condensation.
Cook at speed 3, Varoma for 20min with MC off.
Remove lid, wipe off condensation.
Add dark chocolate and mix on speed 3-4 for 10 seconds or until dark chocolate is fully melted into mixture. Do not over mix.
In a square silicone cake/brownie pan
(or a square tin thoroughly lined with baking paper)
put in a generous dollop of both caramel and chocolate fudge next to each other in the tin. If the caramel fudge has hardened too much to handle easily, warm gently in the microwave until runny again.
Mix the two fudges roughly to create a marble effect. Add another dollop of caramel over the predominantly chocolate half and a dollop of chocolate over the caramel half. Mix. Repeat until all is used and the fudge is marbled in appearance.
Chill in fridge overnight. Remove from silicone tray the following day and cut into small squares. Wrap well or store in a sealed container in the fridge for up to 4 weeks.
Start with making the caramel fudge as you can make the chocolate fudge over the top without rinsing the bowl

Tip
Suitable for TM31.
Halve the recipe if you want a smaller batch. This is a really big batch and is great for Christmas treats, school fetes and hampers.

Very good fudge, not quite so easy to marble, otherwise good.
Very rich and very yummy. Looks pretty with the two flavours - hope the family loves it for Christmas Day.
