- 160 g unsalted butter
- 160 g bittersweet chocolate
- 3 eggs
- 3 egg yolks
- 70 g castor sugar
- 1/3 cup plain flour

pre-heat oven to 160C
place 12 silicon cupcake forms onto a baking tray or 6 ramekin moulds
Place chocolate into TM bowl and grate for 8 seconds on speed 9.
Add butter and melt together for 2-3 minutes, 60C, speed 2.
Either set aside or use a second TM bowl.
Beat eggs, yolks and sugar in TM bowl with butterfly inserted for 6mins, speed 4.
Add flour and continue to beat for 3 mins, speed 4. Once the flour is mixed in (about 1 minute) add the chocolate through the hole in the lid.
Divide batter among prepared moulds.
Bake for about 8-12 minutes until puddings look set around the edges but centres move slightly when gently touched. You will need to work out how long they need depending on your size of mould and your oven. Be careful not to over cook them as the best part of this pudding is the soft centre.
Once slightly cooled (about a minute), invert onto a plate and serve with cream, ice-cream or custard.
Tip
You can refridgerate the uncooked puddings for a few hours, but bring them back to room temperature before baking, and expect them to need a couple more minutes in the oven.
