  • 1 packet Nice biscuits
  • 100 g unsalted butter, cubed
  • 1 tspn ground cinnamon
  • Filling:
  • 250 gblock Cream Cheese, cubed
  • 1 tin Condensed Milk
  • 60 g lemon juice

Recipe's preparation

  1. Put biscuits and cinnamon into bowl and crush for 5-6 seconds on speed 7.  Set aside.  No need to wash bowl.

    Melt butter in bowl, 3 minutes at 50° on speed 2.  Add crumbs back into bowl and mix for 3-4 seconds on speed 4.

    Press into 20cm spring form tin or a foil lined cake tin.  Refrigerate while you make the filling.

    Clean the bowl for the filling.

    Put chopped Cream Cheese, Condensed Milk and lemon juice into bowl and mix for 8 seconds on speed 6 (the mixture should be extremely smooth).

    Pour filling into base, sprinkle with cinnamon and refrigerate at least overnight (2 nights is better).  The longer you let this cheesecake set, the better it is.

    This was delicious! so easy to make aswell, thankyou tmrc_emoticons.) as some of the other comments said the nice biscuits were too sweet i used Marie biscuits and they were really yum and not too sweet.

    This was such an easy dessert but looked as if I'd spent ages preparing it! Super sweet so could use plainer biscuits and I also used the freezer to speed set it and it worked!! Thanks so much tmrc_emoticons.)

    I love love love this recipe! I make it quite a lot.Though I made a couple of changes as it was a little too sweet - Swap Nice biscuits for Digest biscuits and use salted butter = perfect.I also make them into cupcakes. Easy to eat and share without making a mess.

    Hi Kriggers81, That's good to know.  I have only ever put it in the freezer for and hour or so to get it going then back into the fridge to finish.  I'm glad you enjoyed!  Mmmm, might make it today...

    I made this and it was delicious!

    I made it for a Christmas Party so I did them in invidivual muffin patty pans which is at in a muffin tray (it made 1tmrc_emoticons.8).  I also added the 140g pouring cream - great tip!

    Add 140g pouring cream to the filling ingredients and mix for longer.  The whipped cream adds volume, flavour, and helps it to set more quickly.  It also looks lovely in a pie plate.  I have been making this cheesecake for over 40 years and it's always a hit.

    so easy and so so yummy! i will have to remember next time either double the creamy mixture or don't push the biscuits as far up the side of the tin!  it was a real hit! can't wait to make it again.  Thanks Kel!
