Ingredients
Coconut yoghurt
- 1 teaspoon agar agar powder
- 3 cans Ayam coconut cream
- 2.5 tbsp coconut oil
- 2.5 tbsp tapioca starch
- 2 tbsp Rapadura Sugar
- 2 capsule powdered probiotics, or culture from health food shop. Need 40 billion +

I'm cooking this todayRecipe's preparation
1.) Add 1 heaped tsp of agar agar powder to the bowl
2.) Shake coconut cream tins then add all to the bowl
3.) Add coconut oil to the bowl
Cook 10min / 100oC / speed 5
4.) Add 2.5 tbsp of tapioca starch (this will make the yoghurt quite thick - add .5 tbsp more or less, depending on how thick you like it)
Cook 5min / 37oC / speed 5
5.) Remove bowl from machine and remove lid. Place bowl into fridge for approx 20 min to cool down to 37oC.
6.) After 10 min check temperature by placing bowl on machine - temperature will be indicated and will give you an idea of how much longer you need to leave the bowl in the fridge.
7.) Once bowl is at 37oC, you can add the powder from your probiotics capsules (don't add in the capsule casing) or probiotic starter - I actually used both.
8.) Add rapadura (or other sugar would be fine)
Mix 20 seconds / speed 5
(If mix was left too long in the fridge and temp falls below 37oC then you can mix for 5 min / 37oC / speed 5 to bring to room temp)
9.) scrape down sides of bowl and mix for 5 secs / speed 8
10.) select automated setting on TM5 and skip through the steps to the part where the machine takes over the recipe. It will take approx 8 hours from this point so just leave it.
11.) once complete mix for 20 seconds, speed 3.
12.) scrape down sides of bowl then add to a glass bowl (I prefer glass but any bowl should be fine) and leave the yoghurt to set in the fridge.
You could add frozen berries to this or some coconut shreds.
Due to the high fat content of this yoghurt only a small amount will satisfy. One serve of approx 100g is approx 250cals.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. Hi, just confused with adding the tapioca, it says at 37 degrees, but you have just had it at 100 degrees, so I guess it goes in the fridge BEFORE the tapioca starch is added?
