Ingredients

Base

  • 90 grams Butter
  • 1 package Nice biscuits, 250g pack
  • 1 teaspoon cinnamon

Filling

  • 180 gram block of Milky Bar white chocolate
  • 180 gram bar of Milky Bar white chocolate with coconut flakes
  • 100 gram bar of Lindor white chocolate, (**see notes re chocolate)
  • 300ml bottle thickened cream
  • 2 package Philadelphia cream cheese, 250g x 2 blocks
  • 1 teaspoon vanilla
  • 150 grams frozen raspberries
  • 1 tablespoon Desiccated Coconut

Recipe's preparation

    Base
  1. 1) add butter to bowl - mix 2 minutes / 90oC / speed 2

    2) add biscuits (broken roughly) & cinnamon - 20 seconds / speed 5

    3) add all to springform cake tin, press down until firm. Set aside.
  2. Filling
  3. 1) add all chocolate - 3 minutes / 80oC / speed 2 (+ see next step)

    2) add in the cream during the first minute of step 1 above

    3) roughly chop the cream cheese then add to bowl - mix 30 seconds / speed 6

    4) add vanilla + roughly 120g of the frozen raspberries - mix 15 seconds / speed 4

    5) pour filling mix on to the biscuit base then sprinkle with desiccated coconut. Garnish with remaining raspberries and leave in the fridge for approx 2 hours.

** Sienna04's recipe calls for 400g white chocolate so any white chocolate would work fine I'm sure - I just used the above mix of Milky Bar + Lindor and it worked beautifully tmrc_emoticons.)

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
