Ingredients

Cake base

  • 25 grams desicated coconut
  • 100 grams medjool dates, other dates ok but soak first for 10 min in warm water
  • 435 grams almonds, or macadamia nuts or cashew nuts
  • 1 teaspoon coconut oil

Cake filling

  • 300 grams dates, medjool or other
  • 4 --- large apples, peeled and cored, cut into pieces
  • 100 grams coconut cream
  • 1 teaspoon vanilla
  • 1 dash Nutmeg
  • 1 dash all spice

Decoration

  • 1 apple, sliced into thin strips
  • 0.5 lemon
  • 1 dash all spice

Recipe's preparation

  1. CAKE BASE: 

    - add all ingredients to the bowl then mix 45 seconds / speed 9. The mix should be quite crumby. 

    - add cake base mix to a tin, press down around the base of the tin and up along the edges of the tin

    - leave in fridge to cool 

     

    CAKE FILLING: 

    - add dates to bowl, mix 15 sec / speed 8. 

    - add apples to bowl, mix 30 sec / speed 8. The mix should resemble a puree. 

    - add coconut cream, vanilla, nutmeg & all spice. Mix 20 sec / speed 6. Repeat if needed after having scraped sides of bowl. 

    - add filling to the cake tin then put back in the fridge to cool. 

     

    DECORATION

    - spread apple slices on to your chopping board then sprinkle with fresh lemon to stop them from bruising. Sprinkle with all spice or cinnamon. 

    - decorate your cake with the apple, as per the photo, then leave in the fridge to set for at least 30 mins.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.
