  • 1 package Butternut Snaps

  • 250 g cream cheese, roughly chopped
  • 400 g condensed milk
  • 185 g lemon juice, freshly squeezed

Recipe's preparation

    Base
  1. Line base and sides of a springform pan.

  2. Melt butter in TM bowl 3 min / 50*C / Gentle stir setting"Gentle stir setting" .

  3. Add biscuits to bowl and blend 10 sec / speed 9.  Scrape down sides of bowl and blend again 2-3 sec / speed 5.

  4. Press into base and up sides of pan, making sure the sides are at least 5cm high.

  5. Refrigerate 15 mins.

  6. Filling
  7. Make sure the condensed milk and lemon juice are ready to pour.  Place cream cheese into TM bowl and start blending at speed 5.  After 5 seconds start pouring the condensed milk carefully into the bowl through the lid opening.  Follow immediately with the lemon juice.  The whole process should take no longer than 60 seconds.

  8. Pour filling into base.

  9. Cover with cling film and refrigerate for at least an hour before serving.

Tip

You can reserve some of the biscuit base to sprinkle on top for an easy decorative finish.

For Christmas, I make a red jelly to pour over the top to about 0.5cm deep, and place seasonal berries on top.  The kids love it!

Since I posted this recipe, some people have commented that their filling didn't set, although many others have said it worked fine.  I have no answers as to why this might have happened.  Perhaps the correct ingredients or quantities were not used?  Sometimes people substitute 'light' ingredients and expect the same result.  All I can say is I have been making this recipe of my Grandmother's since I was a teenager (over 30 years) and I have never had a problem with it.  I hope it works for you.

    Scleeve: You have to make sure you use full fat cream cheese. And definitely don't use spreadable cream cheese, they will not set. But if you did do that. I am out of ideas haha.

    After 24 hours in the fridge, still not set. My usual no bake cheese cake takes 750grms of cream cheese and the same for your other ingredients. I've scooped out the filling and am going to add more cheese and see if i can rescue it in time for my afternoon tea tomorrow
