Ingredients

Base

  • 350 grams Marie or Arrowroot Biscuits
  • 195 grams Sweetened Condesed Milk
  • 125 grams Butter
  • 100 grams Macadamia Nut
  • 40 grams Ginger, glace or in syrup

Icing

  • 60 grams Butter
  • 550 - 650 grams icing sugar
  • 65 grams Golden Syryp
  • 1 level tablespoons ginger powder

Recipe's preparation

    Base
  1. Add biscuits to bowl; crush roughly, 5 sec., speed 5. Set aside.

  2. Add Ginger and finely chop; 3 sec, speed 5. Set aside.

  3. add macadamia nuts, chop roughly; 3-5 sec, speed 5 ( don't chop too fine). Set aside?

  4. Add Ginger, butter and condensed milk to bowl; mix for 3 minutes, temp 100*, speed 2-3 to melt and mix.

  5. Add rest of ingredients and mix to just combine; 3 sec, speed 3.

  6. Pour into a lined slice tin and press to smooth Then ice.

  7. Icing
  8. Add butter and golden syrup to bowl and melt, 2 min, temp 95*, speed 3.

  9. Add rest of ingredients and mix; 1 min, speed 4. Note you may need to add some hot water to mixture to make a spreadable consistency. Spread quickly over base. 

  10. Can decorate with extra chopped toasted macadamia nuts. Refrigerate until cooled then cut into slices.

    Thanks for that. I to found it a bit too much icing for me but it sells well. If making for myself I would add more ginger to base and cut icing down.

    The kids just love it, its a little too much icing for me, and I would probably put some more ginger (maybe ground) in the base ,but overall very well recieved
