Ingredients
3 egg yolks
- 90 grams white sugar
- 3 egg yolks
- 800 grams whipping (pouring) cream
- 100 grams Milk
- 1 tablespoons vanilla extact
- 1 pinch sea salt
- 1 package cocoa
- 1 packages dark choc chips
- 3 bananas
- 1 tin of caramel

Place sugar into mixing bowl and mill "Closed lid" 2 sec / speed 9. empty into small bowl.
Peel and roughly chop bananas, plus a solid handful of choc chips into mixing bowl and wizz for 10 sec / speed 9.
Place remaining ingredients, including enough cocoa to suit into mixing bowl, except for caramel.
Cook for 7 min / 80 degrees C / speed 4.
Pour into covered container and freeze.
Remove ice cream from freezer and let it soften for a little while. Cut into cube size pieces and place back into mixing bowl, along with a couple of handfuls of dark choc chips. Blend ice cream and chips on a medium speed until a nice consistency is reached. Too fast and the choc chips will shatter too much..
Pour and spoon back into container. Get a teaspoon and cover the top surface are of ice cream mix with eg. malteaser sized globs of tinned caramel. the more the merrier... roughly 2/3 of a tin. Push all caramel globs into ice cream mixture so that they are barely visible.
Cover and refreeze.
