Ingredients

Base

  • 250 g Packet of Malt o Milk Biscuits
  • 125 g Butter softened

Filling

  • lemon rind from 1 lemon
  • 500 g cream cheese
  • 170 g sour cream
  • 170 g caster sugar
  • 1 teaspoon Vanilla Bean Paste
  • 3 eggs

Recipe's preparation

    Base
  1. Place biscuts inClosed lid"Closed lid" process 6 seconds @ speed 7

    Add Softened butter and mix 10 seconds @ speed 4

    Press into lined spring form tin and partially up the sides.

    Place in the fridge for 1/2hr

     

  2. Filling
  3. place Lemon rind Closed lid"Closed lid" 30 seconds @ speed 10, repeat if needed

  4. Place Cream Cheese (500g), Sour Cream (170g), Caster Sugar (170g) and Vanilla Bean Paste in Closed lid"Closed lid"

    30 seconds @ speed 4, increase to speed 5 for a further 15 seconds.

    Scrape down sides 

    mix for a further 30 seconds @ speed 4 or until smooth.

  5. Turn on to seed 4 and Add Eggs one at a time processing till just combined.

    Pour into prepared tin and place in the oven.

    Bake at 160' for 50-60 minutes until just set, and centre wobbles slightly.

    Allow to cool in oven for 2hrs with the door ajar. Refridgerate over night (or until completly cooled and set).

This is such an easy and yummy desert, everyone will love it.

    This was so easy to make and delicious. Everyone loved it. I used gingernut biscuits and doubled the base as I like it quite thick. Will definitely be a regular here!

    First ever attempt at a baked cheesecake, made it for company despite having a dodgy oven.
    Turned out great! Everyone loved it.
    Only change was swapping for gluten-free Anzac biscuits in the crumb - highly recommend.
    Will have to become a regular.

    Worked well thank u.
    Just had to tweak the way it was written a bit.
    Made it in a 23cm springform pan.
    Everyone loved it. Not too rich or sweet.
    Ill make this again.

    Ive made this several times now. It’s delicious served with dollop cream. Very easy to make. Way cheaper than buying a slice from the shop lol. Thanks for this recipe it’s my go to for a great baked cheesecake!!! Yum

    Thank you this was delicious; even better the day after serving! 

    I added the Berry Coulis recipe on top over fresh organic strawberries & blueberries & served with double cream! Yummy! Easy & highly recommended. Only thing I did different was added a bowl of warm water to lower tray underneath whilst cooking in the oven. Saw this hint somewhere to stop cracking.
