Ingredients

Brownie Base

  • 250 g Butter, cubed
  • 200 g plain flour
  • 140 g Coconut sugar
  • 50 g raw cacao powder
  • 4 eggs
  • 1/2 teaspoon baking powder

Cheesecake Topping

  • 200 g Condense Milk
  • 200 g cream cheese
  • 25 g lime juice, (1 Lime)
  • 5 g Vanilla Bean Paste

Recipe's preparation

    Brownie Base
  1. Pre Heat Oven at 170'

    Melt Butter in Closed lid"Closed lid" 2 1/2 Minutes 105' @ speed 2

    Place Flour (200g), Coconut Sugar (140g), Cacao (50g), 4 Eggs, and Baking Powder (1/2 tsp) into Closed lid"Closed lid"

    Process for 40seconds @ speed 3

    Pour into lightly greased long tart tray. Making sure to only go half way up tray. I kept a bit of mixture and made some mini brownies. I have used one with a removable base to make it easy to get out.

    Bake for 10 minutes, you still want it to feel slightly uncooked to the touch.

    allow to cool a little, then place in the freezer to cool completly while you make the topping.  

  2. Cheesecake topping
  3. Insert Butterfly

    Place Condense Milk (200g), and Cream cheese (200g) into Closed lid"Closed lid"

    Mix 2 minutes @speed3 or until consistent

    Add Lime Juice (25g), and Vanilla Bean Paste (5g)

    Mix for 20seconds @speed2

    Pour over Brownie Base and place in the fridge to set (around 4hrs)

Tip

This is a really easy and delicious treat. If using a larger tin you could use all the Brownie mixture and double the Cheesecake mixture.

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.     This seemed to be a good recipe. However, my base was like rubber, I have no idea why ....... until cutting didn't realise the base was not nice. Expensive mistake with condensed milk, cream cheese, 4 eggs and 250g of butter as I followed on and did the topping. All I can assume is my conception of the base being "slightly uncooked to the touch" was overcooked.
