Ingredients
60g sunflower seeds
- 210 g mejool dates (pitted)
- 60 g sunflower seeds
- 65 g pumkin seeds
- 45 g Quinoa flakes
- 40 g Coconut
- 35 g raw cacao powder (not cocoa!)
- 3 tablespoon chia seeds
- 2 tablespoon Goji Berries
- 2 tablespoon linseed
- 4 tablespoon tahini
- 2 tablespoon coconut oil

Add dates and goji berries in Thermomix until you have a bit of a paste – 5-7 sec/speed 8. Add remaining ingredients and mix up until it's combined – 15 sec/speed 8.
You want mixture to be well combined (think wet grainy sand) to enable you to roll into balls. If the mixture is too sticky/wet, add some more quinoa flakes. If too dry and doesn't roll well, add some more liquid (coconut oil, water, tahini or organic maple syrup) till desired consistency achieved.
Roll in to balls – approx. 25-30
These are great in the kids lunch box and are a fab "treat" to get you going with you need a little pick me up.
Keep in the fridge or freezer in airtight container.
Tips:
· roll balls in any of the following for an extra bit of pizazz: desiccated coconut, crushed nuts, raw cocoa or crushed goji berries
· nuts - if you wanted to add some almonds or macadamias mill before the dates and you can also add a bit of raw honey or organic maple syrup for extra sweetness (although I feel it doesn’t really need it).
· substitute cacao powder for protein powder or mix half –half cacao half protein powder
