Ingredients
Fudge
- 1 orange, rind only
- 130 grams Butter
- 395 gram Tin condensed Milk
- 60 grams golden syrup
- 40 grams maleo, usually made with rapadura sugar however I have done with raw
- 120 grams brown sugar
- 200 gram milk chocolate, dark or white will also work for a slightly different taste

I'm cooking this todayRecipe's preparation
1. Use grease proof packing paper to line a 20cm pan.
2. Remove Rind from Orange
3. Place empty bowl on thermomix and turn speed up to 10.
Slowly add pieces of the rind to the spinning blades for approx 1min30secs or until you can no longer hear the sound of the orange being blitzed.
4. Orange rind should be finely blitzed. Scrap down sides of the bowl.
5. Add butter, condensed milk, glucose syrup and brown sugar to the bowl. 5mins 50c sp2
6. Increase temp to 70C 5min sp2
7. Increase temp to varoma 15mins sp3
8. Add chocolate sp3 2min
9. pour mixture into prepared pan
10. Allow to cool on bench, once cool place in fridge, best results occur when allowed to set overnight

For PEPPERMINT FUDGE: omit the orange...and add 1/2 teaspoon of peppermint esscence. When fudge is in tray smash x2 peppermint crisp bars to desired consistency and sprinkle over fudge, gently press with hands to ensure it sticks! soooo yummy!

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.Please note that the TM5 mixing bowl has a larger capacity than the TM31 (capacity of 2.2 liters instead of 2.0 liters for TM 31). Recipes for the Thermomix TM5 may not be cooked with a Thermomix TM31 for safety reasons without adjusting the quantities. Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
