Ingredients

pastry

  • 4 Eggs, Large
  • 300 grams sugar, white or raw
  • 200 grams Milk
  • 2 sachets pane di angeli (baking powder)
  • 1000 grams plain flour

custard

  • 3 eggs
  • 60 grams cornflour
  • 600 grams Milk, whole
  • 1 zest of lemon

syrup

  • 250 grams water
  • 125 grams sugar, white
  • peach food colouring

Recipe's preparation

    method
  1. beat eggs and sugar 1min speed 6

    add oil and milk 1 minute speed 1

    add flour and knead 2min or until well incorporated

    take out dough and make small balls approx 15 grams each and place on tray

    cook in oven in 180 degrees for 15 min (preheat oven)

    meanwhile clean bowl and make custard as per tm5 automated recipe

    once custard is made take out and let cool.

    clean bowl and make simple syrup( do not add food colouring until syrup is cooled) 5 min 100 degrees speed 1. if sugar not dissolved repeat process until sugar has dissolved. 

    once cooked take out cookie and scoop out centre of the cookie from the flat part and fill with custard.

    join 2 cookies together to make one peach.

    dip or brush each peach with syrup and then roll in sugar
