Ingredients

Rum Balls

  • 2 --- Sponge Cakes, I just use store bought ones
  • 80 grams Coconut, finely desiccated
  • 220 grams raw sugar
  • 80 grams cocoa
  • 4 --- egg yolks
  • 4 tablespoons Rum or Rum Essence
  • 1 package Choc Sprinkles

Cheese Cake Base

  • 1 package Choc Ripple Biscuits, Arnotts
  • 50 grams Butter - melted

Cheese Cake Filling

  • 2 block of philladelphia cream cheese
  • 1 tin of condensed milk
  • 1/3 cup rum or rum essence
  • 50 grams cocoa

Recipe's preparation

    Rum Balls
  1. 1 - Put Raw Sugar into Mixing Bowl - 10 secs/speed 9

    2 - Add Sponge Cake Pieces, 80g Cocoa, coconut to mixing bowl - 15 secs/speed 5 (repeat if necessary)

    3 - Add 4 egg yolks, 4-6 Tablespoons of Rum - 10 Secs/speed 4 (repeat if necessary)

    4 - Roll Into Balls and coat in choc sprinkles - set aside in fridge

  2. Cheese Cake Base
  3. 1 - Put Packet of Choc Ripple Biscuits into bowl - 10 Secs/speed 6

    2 - Add Melted Butter - 10 Secs/speed 4

    3 - Remove from bowl and press into container

    4 - Rinse Bowl

  4. Cheese Cake Filling
  5. 1 - Put Cream Cheese, condensed Milk, 50g Cocoa and 1/3 Cup Rum into mixing bowl - 30 secs/speed 6 (scrap down and repeat if necessary)

    2 - Pour over biscuit base - refridgerate for at least an hour - best overnight!  

    3 - put rum balls on top

    4 - serve and devour!

    If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
    For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.
