- 250 grams Arnotts Choc Ripple Biscuits
- 40 grams Butter, cubed
- 500 grams cream cheese
- 60 grams sugar
- 3 eggs
- 1 teaspoon vanilla extract
- chocolate sauce
- 1 Flake chocolate bar

For the base:
Place the biscuits and butter into the TM bowl and blitz 15 seconds, speed 8, or until it has formed a crumb mixture. Then press the crumb mixture into the bottom of a greased and lined springform pan (I use an 18cm pan). Press down firmly with your fingers or use the MC, so it’s nice and smooth.
Wash and dry TM bowl.
For the filling:
Place cream cheese, sugar, eggs and vanilla into TM bowl and mix for 1 minute, speed 6. Scrape down sides of bowl and mix again for 1 minute, speed 6.
Pour mixture into pan over the biscuit base.
Prepare the varoma dish by placing egg rings or chopsticks for the pan to sit on while steaming, to make sure that the pan is not blocking all the holes and will allow steam to come through. Put 1 litre water into TM bowl, place the cheesecake in the varoma, then set lid and varoma into position.
Steam the cheesecake for 60 minutes, Varoma, speed 3. Chill in fridge until completely set.
Top with chocolate sauce and crumbled up Flake chocolate.

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

This is the only way I make cheesecake, it works out perfect every time and so easy !! I put a little lemon zest, nutmeg and cinnamon in the filling as well and decorate it with sliced strawberries on top . Thanks for sharing

Hi AaronMcgrath,
I have two springform pans - an 18cm and 20cm. The springform should fit with the Varoma lid on. If it's just right it should sit just above the bottom of the tray. If a little smaller, I suggest sitting it on a couple of chopsticks to allow steam to circulate.
