Sticky date pudding
- 250 grams dates, pitted
- 1 teaspoon bicarbonate of soda
- 250 grams water, boiling
- 90 grams Butter, unsalted
- 2 eggs
- 1 teaspoon vanilla essence
- 80 grams sugar, brown
- 250 grams flour, self raising
- 70 grams walnuts, chopped
Sauce
- 320 grams cream
- 160 grams sugar, brown
- 90 grams Butter, unsalted
- 3 drops vanilla essence

1. Chop dates in thermomix 5 seconds speed 3.
2. Add boiling water and bicarbonate of soda put on lid. Leave for 10 minutes for dates to become soft. Move to another dish.
3. Cream butter and sugar 5 seconds speed 5.
4. Add eggs and vanilla essence 5 seconds speed 5.
5. Add sifted flour and the date mixture 5 seconds speed 5.
6. Add nuts 5 seconds "Counter-clockwise operation" speed 1.
7. Pour into a greased 20 cm round ovenproof dish and bake in a moderate oven (180 degrees c / 350 degrees f) for 40 to 45 minutes or until cooked when tested with a skewer.

You can use pecans insead of walnuts.

Delicious! Rises very nicely and it was lovely with the syrup- just combine over low heat and pour over warm cake. Winner!
Pud is very nice. I made 15 individual muffin size ones for a party & cooked for 25 min. I used the thermomix syrup recipe as there are no steps for this one.
