Weigh in ingredients and set to 15 minutes / 100 / speed 3. MC removed. Reduce liquid by approx a third. Poor into a container and chill in the fridge until cool.
Remove flesh from three mangoes, zest one lime and juice, add these ingredients and sugar syrup to bowl and blend speed 9 / 20 seconds.
Freeze on a shallow tray, blend twice during freezing process in Thermomix till frozen and store in freezer till served. Otherwise pour mixture into ice-cream maker and churn till frozen.
