- 4 calamari/ squid tubes, silced into 1/2cm rings
- 2 level tablespoons of lime juice
- 1 level tablespoon of lemon juice
- 2 level tablespoon of fish sauce
- 1 level tablespoon of castor sugar
- 1 small red chilli, roughly chopped
- 2 cloves of garlic, peeled
- a small hand full of fresh corriander
- A bag of fresh mixed greens
- baby Roma tomatoes

Add to the bowl lime juice, lemon, fish sauce, castor sugar, garlic, chilli and corriander - chop 5 seconds speed 5 - scrape down bowl and repeat, pour sauce into a jug scrapping all the contents out with a spatula
With out washing the bowl add 1 litre of water
Place sliced calamari into both sections of the varoma, steam 14 minutes, varoma, speed 4
NOTE after 10-12 minutes check the calamari often --- as soon as it becomes white it is done - do not leave it any longer as it will become rubbery
Plate up on your bed of fresh greens, and roma tomatoes - drizzle over the sauce and enjoy
Tip
If your not a huge fan of corriander the substitute with parsly

I made this tonight and wanted it as a hot dish. I omitted the chilli and after calamari was cooked in just 11 minutes, I added cream to the sauce and heated in microwave. I served the calamari on brown/red rice with the creamy lemon & lime sauce with zucchini noodles. So yummy. My husband loved it. Would be great with fish or prawns or any seafood. Definitely a fave recipe for the future.
Just made this and my daughter came to dinner. We all enjoyed it and my daughter said she could eat it all over again, so light and healthy and easy. Will definitely be making it again.
Delicious! Left out the chilli because of my kids (3 & 5) but we loved it! I especially liked the tomatoes as well. Thanks for the recipe
