Ingredients
Perfect Fish / Prawn Tacos
- 3 tbsp extra virgin olive oil
- 1 lime juice, freshly squeezed
- 2 tsp chilli powder
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- 600 g cod fillet, or
- 250 g raw tiger prawns
- 1/2 tbsp vegetable oil
- 1 pinch pepper, ground
- 8 Corn tortillas, soft
- 1 avocado
- 1 lime, cut into wedges for serving
- 1 jar sour cream, for serving
Corn Slaw
- 250g mayonnaise
- 1 lime, freshly squeezed
- 2 tbsp fresh coriander
- 1 tbsp honey
- 500g cabbage, purple, or white
- 1 can sweet corn kernels, small
- 1 jalapeño chilli

- Marinate Fish / Prawns
Place olive oil, lime juice, paprika, chilli powder, ground cimun and ground cayenne into mixing bowl, place the lid and measuring cup.
Mix 5 secs / speed 4.
Place in to a bowl.
Toss in the fish / prawns and toss until evenly coated, set aside and marinade for 15 mins.
Rinse and dry the mixing bowl. - To make the slaw
Place coriander in mixing bowl and chop 5 secs / speed 6.
Scrape down the bowl.
Add mayonnaise, lime juice, and honey into the mixing bowl.
Mix together 5 secs / speed 6.
Place cabbage and corn in a bowl, pour over the mixture.
Add salt, pepper and jalapeno and mix together with clean hands.
Rinse and dry mixing bowl. - Cooking the fish / prawns
Place vegetable oil in mixing bowl and add fish / prawns and marinade into mixing bowl.
Season with salt and pepper.
Cook 5-10mins / 100c / "Counter-clockwise operation" Speed 1 (adjust time until fish/prawns opague)
Rest for 5 mins. - Assemble
Serve fish / prawns over soft tacos with slaw and sliced avacodo.
Squeeze over lime juice and garnish with sour cream.
