Ingredients

Sri Lanken Cashew and Coconut Curry Paste (clone of Passage to India)

  • 1 onion
  • 2 cloves garlic
  • 1 piece ginger, stem, thumb size
  • 2 tomatoes, cut into quarters
  • 1 tbsp sunflower oil
  • 1 tbsp curry powder
  • 1 tsp ground turmeric
  • 1/2 tsp Ground Coriander
  • 1/2 tsp garam masala
  • 1 pinch dried chilli flakes
  • 100 g dessicated coconut
  • 2 tsp brown sugar
  • 250 g cashew nuts, roasted and unsalted
  • 200 g water
  • 150 g Greek-style natural yoghurt
  • 1 tsp tomato paste

Cooking with Chicken

  • 500 g chicken breast, diced
  • 2 tbsp extra virgin olive oil
  • 150 g coconut milk
  • 1 pinch salt
  • 1 pinch pepper, ground

Cooking with prawns

  • 250 g prawn, raw, king, peeled, head and tail removed
  • 2 tbsp extra virgin olive oil
  • 150 g coconut milk
  • 1 pinch salt
  • 1 pinch pepper, ground

Recipe's preparation

    Paste
  1. 1 Place cashews in mixing bowl, place lid and measuring cup on and mill 5-10 secs / speed 7. Set aside in a bowl.
    2 Place onion, garlic, ginger, and tomatoes into mixing bowl, place lid and measuring chop 3 secs / speed 7, then scape down the bowl.
    3 Add sunflower oil and sauté 3 mins / veroma / speed 1
    4 Allow to cool for few minutes.
    5 Add sugar and spices, and remaining ingredients
    6 Simmer 5 mins / 90c / speed 1
    7 Blend 15-30 secs / speed 8-10 graduated or blending mode on TM6
    8 Place into sterilised jar, seal with lid and allow to cool.
    9 Store in fridge if using within 2 days.
    or
    Allow to cool and then place in freezer bag and place in freezer.
  2. Cooking with the paste in pan
    Heat extra virgin olive oil in pan to a medium heat.
    Add 500g of Chicken or 250g raw prawns.
    Cook for 10mins for chicken and 5 mins for prawns.
    Pour in paste and cook for a further 10 mins for chicken or 5 mins for prawns.
    Add salt and pepper to season.
    Add 150ml coconut milk 5 mins from end and simmer.
  3. Cooking with paste in thermomix with Chicken
    Add 2 Tbsp extra virgin olive oil, and knob of butter to mixing bowl.
    Place diced chicken cook 3 mins / 100c / Counter-clockwise operation"Counter-clockwise operation" speed 1.
    Add Paste and cook for a further 10 mins / 100c / Counter-clockwise operation"Counter-clockwise operation" speed 1.
    Add salt and pepper.
    Add 150ml Coconut milk and cook for a further 10mins / 100c / Counter-clockwise operation"Counter-clockwise operation" speed 1
    Serve with rice and naan.
  4. Cooking with paste in thermomix with Prawns
    Add 2 Tbsp extra virgin olive oil, and knob of butter to mixing bowl.
    Place prawns cook 5 mins / 100c / Counter-clockwise operation"Counter-clockwise operation" speed 1.
    Add Paste and cook for a further 5 mins / 100c / Counter-clockwise operation"Counter-clockwise operation" speed 1.
    Add salt and pepper.
    Add 150ml Coconut milk and cook for a further 10mins / 100c / Counter-clockwise operation"Counter-clockwise operation" speed 1
    Serve with rice and naans.
