Ingredients
Sea Shanties
- 400 grams fish fillets, White flesh
- 150 grams Prawns, raw peeled
- 1 potato, Large
- 2 French Shallots, Chopped
- 2 green shallots, Chopped
- level teaspoon lemon zest
- 1/2 cup frozen peas/corn, Up to 1 cup thawed
- 2 eggwhites, Beaten with a little water
- egg wash, Use egg yolks
- panko breadcrumbs
- seasoned flour
- seasoning to taste
- oil to fry
- 2 tablespoons flour plain

Chop seafood roughly and add to bowl, pulse briefly 2-3 times, set aside. Peel and chop potato into 5 centimeter pieces and place in simmering basket. Cover with salted water and cook varoma speed 2-3 for 12-15 minutes or until just tender. Remove water from bowl and process slightly cooled potato shallots and green shallots speed 3-4 briefly 4-5 seconds. Allow to cool until warm then add seafood flour peas and corn, zest and egg whites. Season to taste. Set to speed 3 "Counter-clockwise operation" until combined. Shape into rectangles and refridgerate for half to 1 hour. Carefully crumb(flour egg wash then breadcrumbs ) heat 2 centimeters of oil in pan and test heat with end of wooden spoon. Should start to sizzle immediately. Place croquettes in pan and fry to golden brown then flip over. Do not overcrowd pan. Drain on absorbent paper. Add more oil if necessary bringing it back to correct temperature to avoid oil absorption. Serve with a tasty mayonnaise and a Greek salad.

Leave out prawns if preferred add some parsley or other flavours.

Whole family enjoyed it, served with Tartare Sauce - that's all I had in the cupboard at the time 😆
I used Ling Fish Fillets, might try Hoki next time for the smoother fish texture, and might mash up the potato completely before instead of leaving it a bit choppy. Overall, definitely close to the I&J Sea Shanty! Thank you for sharing this xx
