Ingredients

AUTHENTIC Thai Beef Salad

  • 500 grams Rump Steak
  • handful fresh coriander leaves
  • handful fresh mint leaves
  • 2 spring onions, roughly chopped
  • 1 Lebanese cucumber, quartered
  • 1 red onion, quartered
  • fresh chilli to taste, optional
  • juice of 1 lemon
  • 1 tablespoon fish sauce

Recipe's preparation

  1. 1. Cook steak to medium rare using your preferred cooking method (on a bbq, frypan, varoma, air fryer). Airfryer instructions: 10 minutes on 200 degrees, no need to turn. The rarer the better. The lemon juice will cook it further later on.

     

    2. Slice the cooked steak into thin strips, place into a bowl and set aside while you prepare the rest of the salad in your Thermomix.

     

    3. Place coriander, mint, spring onions, cucumber, red onion and chilli if using into TM bowl and chop for 5 seconds, speed 4. Repeat if necessary. I like my herbs and vegetables to be kept chunky so just check and if you want it finer just scrape down and do it again until you have your preferred consistency.

     

    4. Add lemon juice, fish sauce and cooked beef to TM bowl and combine for 10 seconds on speed 2, REVERSE. 

     

    5. Taste to see if more lemon/fish sauce is needed.

     

    6. Place in fridge until ready to serve.

Tip

This salad is great eaten on its own or it can be served with rice or vermicelli noodles for a light meal.

Beef can be substituted with chicken meat or chicken mince for “Laab Gai”. Lemon grass and ground rice are traditionally added to Laab however is optional. Just fry up chicken mince with a little fish sauce. Lemon can be replaced with lime.

    Made the chicken variation of this recipe tonight and everyone loved it. I didn't add any chilies because I didn't have any but next I'll add one to elevate the flavour even more.
    i loved it chunky so only chopped it once.
    I will definitely be making the beef version next time too.
    this will definitely be on our main meal rotation

    Yummy and easy. I cut all my vegetables by hand. I then made the dressing using the herbs, lemon juice and fish sauce - and added garlic, ginger and lemon grass - in the Thermomix. Will make again!

    I enjoyed this meal. I placed it on a bed of mixed lettuce and capsicum to make it a bigger meal.

    So very very easy!   Made this tonight and neither hubby nor I could get over how quick it was and how yummy it was.  This is going to be on rotation this summer!!   Thank you very much for sharing this great recipe!

    I loved this recipe. I slightly  altered it by added a handful of basil, julienned carrot and a large handful of peanuts for crunch. Very Thai tasting. All 6 members of my household agreed it was yummo and should be made again.
