Ingredients

Chicken and pumpkin couscous

  • 1 brown onion, peeled, quartered
  • 2 tbsp olive oil
  • 2 skinless chicken thigh fillets, trimmed, cut into 1-2 cm cubes
  • 150 g pumpkin, peeled, cut into 1-2cm cubes
  • 200 g Chicken stock or Vegetable stock, see tips
  • 100 g instant couscous
  • 2 tbsp fresh parsley or coriander, leaves only, finely chopped (optional)

Recipe's preparation

  1. Place onion into mixing bowl and chop 3 sec/speed 7. Scrape down sides of bowl.

  2. Add oil and sauté 3 min/Varoma/speed 1. Add chicken and pumpkin and cook 3 min/100°C/Reverse/Gentle stir setting"Gentle stir setting" .

  3. Add stock and cook 10 min/90°C/Counter-clockwise operation"Counter-clockwise operation" /Gentle stir setting"Gentle stir setting" or until chicken and pumpkin are cooked.

    Add couscous and herbs (if using) and mix 5 – 10 sec/Counter-clockwise operation"Counter-clockwise operation" /speed 1 or until couscous is completely combined.

  4. Allow mixture to rest in mixing bowl with mixing bowl lid on and MC in place. The warmth will allow the couscous to finish cooking. This should take about 5 – 10 minutes.

    Transfer the mixture to a ThermoServer and fluff using a fork before serving.

    I liked the flavour although found it a bit too salty ( i used Vegetable  stock) I made it without chicken so added more pumpkin. Will definately make again, just reduce the amount of stock i use.

    Delicious!!  I added two tablespoons of vegetable stock to 200g water and it was amazing!!!  So simple!!

    Very tasty, will definitely make it again tmrc_emoticons.) I used bacon instead of chicken and added garlic and extra veggies (more pumpkin, sweet potato and spinach). Only negative is that it definitely doesn't serve 4 people - I only got 2 serves out of it and that's with all the extra ingredients

    So simple & so tasty! I used 1 tablespoon chicken stock & 200g water & served on baby spinach leaves. Next time, I won't let the couscous rest as long (I left it for 10 minutes & it was a bit overdone for my tastes). Thanks for sharing!

    This is wonderful my grandson loves it and the 2nd time I stirred through the couscous and then place in a Thermoserver to rest instead of leaving in the TM bowl

    Hi Aphra,

    You can use breast fillets instead of thigh fillets.

    Thigh fillets are used in a lot of recipes in the book, as it contains twice as much iron, and is recommended for the babies and toddlers.

    Really nice to have something that I actually had the ingredients for.

    We were all still pretty hungry afterwards though, filled up on some fresh baked wholemeal bread.
