Ingredients
Tomato Sauce
- 4 sprigs Mixed fresh herbs, Eg. basil, parsley, oregano, sage
- 1 clove garlic
- 50-80 g onion, cut in half
- 800 g Diced Tinned Tomatoes
- 1 teaspoons salt
- 2 pinches black pepper
Chicken Schnitzels
- 3-6 chicken breasts
- 100 g breadcrumbs
- 2 eggs
- salt, to season
- pepper, ground, to season
- 100 g plain flour
- 2 tablespoons Milk
- oil, for frying
Parmigiana Toppings
- 100 g ham
- 100 g grated cheese
- extra toppings as desired, eg jalapenos, capsicum

- Place herbs, garlic, onion and extra virgin olive oil into mixing bowl and chop 5 sec/speed 5. Scrape down sides of bowl.
- Sauté 3 min/120°C/speed 1.
- Add crushed tomatoes, salt and pepper and cook 30 min/Varoma/speed 0.5, owith simmering basket on top instead of MC. Set aside. Whilst cooking proceed with preparing and frying schnitzels.
- Preheat oven to 180°C. Line a baking tray (30 x 40 cm) with baking paper and set aside.
- Place a shallow bowl onto mixing bowl lid and weigh breadcrumbs into it, then add salt and pepper and stir to combine. Set bowl aside.
Place another shallow bowl onto mixing bowl lid and weigh flour into it.
In a third shallow bowl, place eggs and milk and whisk to combine. - Using a meat mallet or rolling pin, flatten out each chicken breast until approx 15cm. Dip each piece into bowl with flour mixture and dust off excess flour. Then dip into egg wash, then into breadcrumbs, gently patting each side to coat. Place onto baking tray.
- Place a large frying pan over high heat and add oil (1-2 cm high). Working in batches, place coated chicken pieces into pan and fry for 1-2 minutes each side, until golden. Transfer onto prepared baking tray.
- Top with reserved tomato sauce, ham, cheese and any other desired toppings. Place into oven and bake for 15-20 minutes (180°C) or until chicken is cooked through.

Tip
Use 3-6 chicken breasts depending on the portions required to feed your family.
Freeze leftover sauce in an air tight container.
Schnitzels can also be frozen before cooked.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
