Ingredients

- 2-3 chicken breasts, cubed or tenderloins
- 1 small head of brocolli, cut into small florets
- 1 zucchini sliced
- 1 large carrot, sliced
- 100 g cauliflower florets
- 350 g basmati rice
- 1200 g water
- 2-3 teaspoon TM vegetable stock concentrate
Satay Sauce
- 1/2 red onion (Spanish)
- 1 tbsp coriander, fresh
- 1.5 tbsp coconut oil
- 1 tsp ground cumin
- 2 cloves garlic, peeled
- 3 tbsp Natural crunchy or smoothpeanut butter
- 1 small red chillies, unseeded
- juice of half lime
- 2 tbsp Natvia
- 3 tbsp Shredded coconut
- 1 tsp soy sauce or tamari, (optional)
- 1-2 cups water

Place water in . Put rice into TM basket, and rinse until clear. Put TM basket with the rice into .
Put Varoma into position and spread chicken out evenly on the Varoma tray (the bigger additional part). Steam 17 min/Varoma temp/speed 2.
Add the vegetables into the bottom section of Varoma (you may wish to wipe it out if any chicken residue has dropped), and steam for an additional 8-12 min/Varoma/speed 2.
Once cooked, remove chicken and vegetables from Varoma tray and place in ThermoServer while you make the sauce. Remove the rice which will be cooked in the mixing bowl, and place in ThermServer (if you have two), or another bowl.
Place garlic, onion, chilli, and coriander into mixing bowl and chop 5 sec/speed 7. (TIP:Add more chilli if you prefer a spicier satay)
Add cumin and coconut oil, saute 3mins/Varoma temp/Speed 2.
Add peanut butter, lime juice, Natvia, coconut and soy sauce and mix 10sec/speed 4 (this will form a paste). Gradually add the water, about 1/2 cup at a time until you get the sauce to a consistency that you like (more water = runnier sauce). If you have used smooth peanut butter, you will generally use less water. Cook 5mins/Varoma temp//.
Pour sauce over chicken and vegetables and gently stir to combine. Serve with rice you have also prepared.

You can use vegetable or olive oil as a sub for coconut oil if you do not have any.

Didnt have to perfectly measure everything which was great. Chucked roughly double of everything in and was perfect Easy recipe.
Very nice indeed. Taste was great, instructions were easier than some other Satay recipes. The photo did no justice to the meal tho.
Next time I would cook the sauce first then cook the chicken/veg/rice second and I might try coconut milk/cream instead of water.
Can only comment on the satay sauce, as I used it for a marinate for some over roasted chicken pieces. The sauce was delicious. I used a whole red onion, and didn't include the nativa but it was fantastic. Will never have to buy satay sauce in a jar again!
